Egg-free chocolate salami is one of those desserts that instantly takes you back to childhood. My mum and aunt used to make it, and it was always a celebration when it appeared on the table.

For years, I only tasted it, then one day I plucked up the courage and discovered it’s one of the simplest desserts to make at home. You don’t need to worry about proving or baking: it’s just a case of combining, mixing with a bit of patience, and forming a lovely roll of deliciousness.

This version is egg-free and uses condensed milk, which binds the mixture and makes it perfectly creamy. The result is indulgent, safe, and always a success. It’s a choice that puts my mind at ease, especially when children are eating it too.

It’s a no-bake dessert, ready in minutes, perfect for snacks, after meals, or for unexpected guests. And one slice always leads to another.

Before you start

You don’t need any special equipment to make egg-free chocolate salami, but there are two little things that make the job easier.

I mix everything in a large glass bowl: the mixture is dense, so I can work with it well without anything spilling out.

Also, have some cling film ready: you’ll need it to shape the salami and compact it well. It’s a simple step but makes all the difference for a nicely firm roll when sliced.

  1. Break half of the biscuits into not-too-small pieces.
    Put the other half in a bag and bash them until you get finer crumbs, but don’t reduce them to powder.
    Combine everything in a large bowl.

  1. In a second bowl, cream the soft butter at room temperature with the condensed milk until you have a smooth cream.

  2. Sieve the unsweetened cocoa powder and gradually incorporate it into the butter and milk mixture, stirring until uniform.

  3. Melt the dark chocolate in a bain-marie and, while still warm, add it to the cream. Stir carefully.

  4. Pour the resulting cream into the bowl with the biscuits and mix using circular motions, without crushing, until you have a homogeneous mixture.

  5. Lay out a sheet of cling film about 50 cm long, distribute the mixture to form a cylinder, and roll up the film, shaping the salami.
    Close the ends like a sweet wrapper.

  6. Refrigerate for at least 3 hours, until completely firm.

  7. Once ready, remove the cling film, dust with icing sugar if desired, cut into 1.5โ€“2 cm thick slices, and serve.

The great thing about egg-free chocolate salami is that it lends itself to lots of little variations, depending on your tastes and what you have in the house.

With Pistachio Granules

Add a handful of coarsely chopped pistachios to the mixture. They add crunch and that green touch that’s so popular nowadays, especially with pistachio lovers.

With Pine Nuts (A Nod to Tradition)

Pine nuts were used in some older versions, when this dessert was also called Pope’s Salami. They have a delicate flavour and make the dessert more elegant.

With Hazelnuts or Almonds

Lightly toast them and then chop them up: guaranteed aroma and crunch.

An Even More Indulgent Version

A few chunks of dark chocolate in the mixture create little surprises with every bite.

These are small additions that change the character of the dessert, but the base remains the same: simple and irresistible.

Common Mistakes to Avoid (for a Perfect Egg-Free Chocolate Salami)

Don’t reduce the biscuits to powder

The biscuits shouldn’t become flour. It’s precisely the contrast between the chocolate cream and the crunchy pieces that makes chocolate salami so good.

Break them up with your hands or coarsely: you should be able to feel them when you bite.

Don’t rush to put it in the fridge

If the mixture is too soft when you wrap it, the roll risks losing its shape. Compact it well in the cling film and give it time to firm up in the fridge.

A bit of patience here pays off when slicing.

Don’t overdo the liquids

Too much condensed milk or other soft ingredients will make the mixture sticky and difficult to shape. It should be workable, not runny.

Don’t cut it straight from the fridge

If it’s too cold, it can be hard and break when sliced. Just 5-10 minutes at room temperature is enough to get nice, clean slices.

Even if the shape isn’t perfect, the flavour is always the same: chocolate and biscuits, a combination that everyone agrees on.
