Soft and Stringy Baked Potato Gateau, No Eggs Needed
Potato gateau is one of those dishes that screams ‘home’: soft, flavourful, and golden potatoes that the whole family will love. I’ve always made it with a specific goal in mind: soft and stringy on the inside, golden and slightly crispy on the outside, with no complicated steps. In this version, I don’t use eggs – not because anything is missing, but because they’re simply not needed.
The potatoes are boiled with their skins on so they retain their starch and full flavour better. Once peeled and left to cool slightly, they become naturally compact and perfect for creating a stable mixture.
I mash them directly in the glass baking dish, which helps to cook both the top and bottom evenly, forming that golden crust that makes the gateau irresistible.
After baking, I let it rest for a few minutes: this small step allows the gateau to settle, remaining soft inside and dry on the outside.
For the filling, I choose simple and indulgent ingredients – cooked ham and würstel – for a stringy centre that wins over both adults and children.

Wash the potatoes well and boil them with their skins on in plenty of salted water, with the lid on, until tender (about 20-25 minutes, depending on size).
The potatoes should be boiled with their skins on to retain the starch, which is essential for achieving a compact mixture even without eggs.
Drain them, let them cool for a few minutes, and then peel them: this way, they will maintain a compact and well-bound consistency.
Meanwhile, cut the mozzarella into cubes, the cooked ham into strips, and the würstel into rounds.
Grease a not-too-deep baking dish (a glass dish is better, as it ensures even cooking and browning even on the bottom) and sprinkle it with breadcrumbs.
Form the first layer: mash 3 potatoes directly onto the bottom of the dish with a potato masher and level them with a fork, distributing them evenly over the entire surface.
Add the cooked ham, würstel, diced mozzarella, and some of the Grana Padano, distributing everything evenly. Finish with a few knobs of butter.
Now form the final layer of potatoes: mash the remaining potatoes over the filling, covering the entire surface well. Gently level with a fork, without pressing down too hard.
Finish with the remaining Grana Padano, the pieces of butter, and a light sprinkling of breadcrumbs. If you like, you can also add a drizzle of oil for a more intense golden colour.
Bake in a preheated static oven at 180°C, on the bottom rack, for about 30-35 minutes, until the surface is well-browned and crispy.
Turn off the oven and leave the gateau inside for another 10 minutes, then remove from the oven and let it rest for a few more minutes before serving.

Variations of Egg-Free Potato Gateau
This is one of those dishes that easily adapts to what you have in the fridge.
Layered Version (more defined)
- First layer: mashed potatoes
- Second layer: cold cuts, cheeses, a few knobs of butter, and würstel
- Third layer: more potatoes, breadcrumbs, and butter on top
This way, you get a well-layered gateau that’s stringy in the centre.
Rustic Mixed Version
You can also mix everything in a bowl: potatoes, filling, and cheeses.
The result will be a more compact, rustic, and very flavourful potato cake.
For a Perfect Crust
A drizzle of extra virgin olive oil over the breadcrumbs before baking helps to brown it evenly without drying out the surface.
Mistakes to Avoid
Skipping the Final Rest
The gateau is soft straight out of the oven.
Letting it sit in the switched-off oven for 10-15 minutes and then resting it outside makes it more stable and easier to slice.
Watery Potatoes
If the potatoes absorb too much water during boiling, the mixture becomes too wet.
It’s better to boil them with the skins on and drain them well.
Too Much Filling
Overdoing it with cheese and cold cuts can make the inside too moist.
Better to have balance than abundance.
Storage and Make-Ahead
The gateau is excellent for preparing in advance.
- In the fridge: 2–3 days, well covered
- Reheating: oven or microwave
- The next day, it’s often even more flavourful as the tastes meld together
