These apple waffles are ideal for breakfast and snacks, they are quick to prepare and stay soft even when cold. A simple recipe, without butter, perfect when you are short on time but want a homemade dessert.

This is one of those dessert-saving recipes that come in handy when you’re short on time but fancy something good and homemade.
The waffles with diced apples are soft, fragrant, and naturally moist thanks to the fruit: a few common ingredients, a bowl, and an electric waffle maker.

Any type of apple will work, and the result is always fluffy and delicious. Perfect for breakfast, snacks, or as a last-minute treat.

Little tricks for perfect waffles

The key is in how you cut the apples: diced, not grated or puréed. If they are too finely processed, they release all their juice immediately, and the batter might not rise well during cooking. Irregular pieces are better, as they distribute moisture without weighing down the batter.

The batter is really simple: no oil needs to be added, except for lightly greasing the waffle maker.
When you close the waffle maker, do not open it until the cooking time is up: if you do, the waffle will collapse and won’t rise anymore. Patience is everything here.

For a more intense golden colour, you can extend the cooking time by a few minutes: with my waffle maker, about 6 minutes at maximum temperature is enough to get well-cooked waffles, soft inside and slightly crispy outside.

  1. Prepare the apples
    Peel the apples, remove the core, and cut them into small diced pieces. Set aside.

  1. Prepare the batter base
    In a large bowl, combine the eggs and sugar. Mix with a hand whisk, just enough to combine without whipping.
    Add the milk and mix briefly.

  1. Incorporate dry ingredients
    Pour all the flour into the bowl and mix until you get a smooth, lump-free batter.
    Add the instant yeast and mix again.

  1. Add the apples
    Incorporate the diced apples into the batter and mix gently to distribute them evenly.

  1. Cooking the waffles
    Heat the electric waffle maker well on the highest setting.
    Lightly grease the surface with a little oil.
    Pour a ladleful of batter into each mould, without overfilling: the batter rises a lot during cooking.

    Close the waffle maker and do not open it during cooking.
    Cook for 5–6 minutes, until the waffles are golden and well puffed up.

  1. Serve
    Remove the waffles from the waffle maker and repeat the process until you have used up all the batter.
    These quantities make approximately 6 waffles.

This recipe is very versatile and lends itself to small flavour experiments:

Fruit variations: in addition to apples, you can try diced pears or peaches, following the same principle: irregular cuts and not puréed to avoid too much moisture.

With nuts: add chopped walnuts, hazelnuts, or almonds to the batter for crunchiness and extra flavour.

Spices and aromas: cinnamon, nutmeg, or grated orange zest add an aromatic touch without overpowering the delicate apple flavour.

Chocolate or cocoa nibs: for those with a sweet tooth, a few dark chocolate chips in the batter or on top of the warm waffles create an irresistible contrast.

Mistakes to avoid

Small adjustments that make a difference:

  • Apples too small or puréed: they release too much juice, and the batter struggles to rise. Slightly irregular pieces are better.
  • Opening the waffle maker too early: the cooking time must be respected in full, otherwise the waffle will collapse.
