When you fancy peppers but want something lighter and easier to digest, pan-fried friggitelli are the perfect choice. Sweet, juicy, and tender, they have a delicate flavour that doesn’t weigh you down.

I often prepare them with a few cherry or cocktail tomatoes: during cooking, they release their juice, creating a flavourful base that breaks the monotony of plain peppers and makes the dish even tastier.

Friggitelli are easily found already packaged in 500g bags. They can be smaller or larger, but this doesn’t change the flavour or the final result: what matters is gentle, careful cooking, as they are more delicate than classic peppers.

What you need

To prepare them perfectly, you’ll need a few, but the right, tools:

  • Large frying pan with a lid → essential for cooking them without drying them out
  • Pointed knife → useful for trimming the stem and cleaning the inside
  • Chopping board

The traditional recipe often leaves them whole with the stem and seeds, but I prefer to clean them: the flavour remains delicate and the texture more pleasant.

  1. Prepare the friggitelli. Wash the friggitelli well under running water. Remove the stem and, if you prefer a more delicate flavour, make a small slit to remove the internal seeds. Then let them drain very well in a colander: the less water remains, the fewer splashes you’ll have during cooking.

    Cut the tomatoes. Cut the cherry tomatoes into 4 pieces. There’s no need to make them too small: they will release their juice naturally during cooking.

    Prepare the garlic. Lightly crush the garlic cloves after peeling them. This way they will flavour the oil without burning.

  2. Sautรฉ the garlic. Heat plenty of extra virgin olive oil in a large frying pan. Add the garlic and sautรฉ over medium heat until it releases its aroma, being careful not to let it brown too much.

    Add the friggitelli. Pour the well-drained friggitelli into the pan. Be careful of any splattering if they still contain moisture. Distribute them evenly across the bottom of the pan.

    Initial browning. Cook over medium heat for 5-10 minutes, stirring frequently. They should start to soften and get a light golden colour on all sides.

  3. Add tomatoes and salt. Season with salt to taste, add the cherry tomatoes, and stir gently. Cover with the lid and continue cooking for about 10 minutes over medium-low heat. Stir occasionally for even cooking.
    Finishing. At the end of cooking, the friggitelli will be soft and slightly wilted, with a natural sauce at the bottom. If you prefer them drier, cook for another 3-5 minutes without the lid.
    Serve them hot or warm: they are delicious both ways.

Flavourful Variations of Pan-fried Friggitelli

With capers and olives
Add a handful of desalted capers and olives (green or black) halfway through cooking. They add a savoury touch that pairs very well with the sweetness of the friggitelli.

Spicy Version
For those who love bold flavours, add a small fresh or dried chilli pepper along with the garlic to the initial oil. A little goes a long way to give the dish character.

With sweet onion
Sautรฉ half an onion, thinly sliced, along with the garlic. It becomes soft and slightly caramelised during cooking, adding depth to the flavour.

With vinegar at the end of cooking
A teaspoon of white wine vinegar in the last few minutes will liven up the taste and create a pleasant sweet and sour contrast.

Tips to Avoid Mistakes

Don’t stir vigorously
At the end of cooking, friggitelli are very delicate. Turn them only a couple of times with gentle movements to avoid them breaking or becoming too mushy.

Medium-low heat
Too high a heat will burn them on the outside while leaving them raw inside. Over medium-low heat, they cook evenly and remain soft.

Be careful of washing water
Always drain them very well before putting them in the pan to avoid splattering and unwanted boiling.

How to serve pan-fried friggitelli

They are excellent:

  • on warm bruschetta
  • with a slice of toast
  • as a side dish for a simple slice of meat
  • inside a rustic sandwich

Hot or warm, they always remain flavourful.
