This recipe for pan-fried lemon shrimps comes from a very simple thought: why cover up a flavour that’s already perfect? Shrimps have an unmistakable taste. Sweet, juicy, delicate yet firm at the same time.

And they are often fried, covered in breadcrumbs, or deglazed with white wine which, if not used carefully, risks deviating from their natural balance.

I wanted something different. Not to add. To enhance.

So I stuck to the most essential approach:

Extra virgin olive oil, which adds roundness and a natural light creaminess.
🍋 Lemon, which shouldn’t cover or make it acidic, but just hint at a freshness that cuts through the sweetness without overpowering it.
🌿 Parsley, which adds fragrance and lightness.
⚫ Salt and pepper, small details that complete without intruding.

The secret isn’t adding ingredients. It’s stopping at the right moment.

And this is precisely where the lid comes in: the last few minutes in a hot, humid environment allow the shrimps to finish cooking while remaining tender, juicy, and vibrant.

This is a light, spring-like, yet intense recipe. A dish that smells of the sea and sunshine, ready in 15 minutes, with no fuss.

Why these pan-fried shrimps stay tender and juicy

It can happen – and often does – that after browning the shrimps on both sides, the bottom of the pan becomes too dry.

In this case, before covering with the lid for the last 5 minutes, add a small coffee cup of fresh water.

This isn’t a random addition.

The aim isn’t to fry or dry out the shrimps, but to keep them in a light natural sauce that forms during cooking thanks to:

This light liquid base allows the heat under the lid to finish cooking without stressing the flesh.

    Wash and clean the langoustines. With the help of a toothpick, gently score between the central segments of the back and extract the black inner vein. Rinse and drain well from the water.

  1. Cooking

    Heat a generous drizzle of extra virgin olive oil in a non-stick pan with the two cloves of garlic. Add the langoustines and brown them over medium-low heat for a few minutes per side. Season lightly with salt, add black pepper, drizzle with the juice of half a lemon, and add fresh chopped parsley.

  1. The crucial step: the lid

    Cover with the lid for the last 5 minutes of cooking.

    This step is essential because:

    • it completes the cooking of the central part of the langoustine

    • it preserves tenderness and succulence

    • it allows the precious natural juices that form in the pan to accumulate

    I usually don’t add extra liquids. Just lemon and oil.

    However, it can happen that the bottom dries out too much:
    in that case, add a small coffee cup of water, just enough to revive the sauce and finish cooking without stressing the prawns.

    Turn off the heat and serve, nice and hot, fragrant.

Variations for Lemon Shrimps

This preparation is essential, but it can be subtly adapted:

  • A light grating of lemon zest for a more intense aroma
  • A pinch of chilli for a lively note
  • A clove of garlic removed halfway through cooking for a milder flavour
  • A splash of white wine (a possible variation, but be careful: it can slightly mask the natural sweetness of the shrimp)

What to Serve with Pan-Fried Shrimps

Their lightness makes them versatile:

🥦 With steamed vegetables simply dressed with oil and salt
🍝 With a side of spaghetti, perhaps tossed in their own sauce: a wonderful and natural pairing
