Pork loin stew is one of those dishes that can surprise you: if cooked incorrectly, it can be dry and tough, but with the right approach, it becomes tender, juicy, and full of flavour.

This is the recipe I make when I want a soft stew that falls apart with a fork. No elaborate spices or complicated ingredients: just the classic Italian soffritto of onion, carrot, and celery, a bit of red wine, and slow, covered cooking that does all the work.

I also use a drizzle of extra virgin olive oil infused with rosemary, which gently scents the meat without overpowering its flavour. During cooking, the vegetables release their natural moisture, helping the pork loin stay tender and juicy.

  1. Prepare the ingredients

    Dice the onion, cube the carrot, and slice the celery. Cut the pork loin into regular cubes too.

  1. Sear the meat

    Heat a large pan or casserole dish with a generous drizzle of extra virgin olive oil. Add the meat and sear it well on both sides.

    When the meat is nicely browned, remove it from the pan and set aside.

    Important note: do not overcook the meat. There should be some oil and its juices left in the pan.
  1. Sautรฉ the vegetables

    In the same pan, without turning off the heat, add the onion, carrot, and celery.

  1. Deglaze and add the meat

    Return the meat to the pan with the vegetables, stir to combine, and pour in the red wine. Let it simmer for a few minutes.

  1. Start cooking

    Season with salt, then add about half a litre of hot water. Wait for it to return to a boil.

  1. Cook covered

    Cover with the lid, reduce the heat slightly, and cook for about 30 minutes.

  1. Final stage

    After the time has passed, uncover, stir gently: the liquid should have reduced, leaving about a third of the sauce. Cover again with the lid and continue cooking for another 10-15 minutes.

  1. Final rest

    Turn off the heat. Even if the sauce still seems a bit liquid, don’t worry: the stew will continue to absorb its juices during the rest period.

This same method works very well with other cuts of pork or with beef, slightly adjusting the cooking times.

  • With beef: requires a few more minutes, but the result is very flavourful
  • More rustic version: you can add diced potatoes in the last 20 minutes of cooking
  • More fragrant: bay leaf or fresh rosemary during cooking add an extra touch

What to serve with Pork Loin Stew

This stew is very versatile and pairs easily with:

  • crusty bread (perfect for dipping into the sauce)
  • mashed potatoes
  • creamy polenta
  • plain white rice to soak up the sauce

It’s also a great dish to take to work: hearty, complete, and easy to reheat.

How to Store

The stew keeps very well:

  • in the fridge for 2 days in an airtight container
  • it reheats excellently in the microwave or in a pan with a splash of water

Indeed, the day after it’s often even tastier because the flavours meld together better.
