  1. Separate the egg yolks from the whites and put the yolks in a large bowl.

  1. Add the sugar to the yolks and whisk until you have a light and creamy mixture.

  1. Add the sifted flour and continue mixing until you have a smooth mixture.

    The mixture might seem a little dry, but that's normal. The important thing is to combine it well.
  1. Meanwhile, heat the milk in a saucepan, add the vanilla, and stir lightly.
    Do not bring to a boil: the milk just needs to heat up until you start to see the first wisps of steam on the surface.

  1. Pour the hot milk a little at a time into the egg mixture, stirring continuously until it's completely dissolved.

  1. Pour everything back into the saucepan and cook over low heat, stirring constantly, until the custard thickens.
    This will only take a few minutes. Do not let it boil.

  1. Turn off the heat and immediately cover the custard, pressing cling film or a lid directly onto the surface, to prevent a skin from forming as it cools.
