Chicken Breast with Porcini Mushrooms in a Pan

  1. Prepare the porcini mushrooms

    Gently rinse the still frozen porcini mushrooms under cold running water. Let them drain well.

    Heat a drizzle of extra virgin olive oil in a pan over low heat. Add the still frozen mushrooms, cover with the lid, and cook for about 10 minutes.

    Transfer the mushrooms with all their cooking liquid to a plate. If they are very large, cut them in half to distribute them better with the chicken.

  1. Prepare the chicken breast

    Cut the chicken breast into not-too-thin strips. Finely chop the onion.

    In the same pan used for the mushrooms, add a drizzle of extra virgin olive oil. Sauté the onion over low heat until it is soft and lightly golden.

    Add the chicken. Sprinkle with a few drops of lemon juice. Cook until the chicken is partly golden, but without drying it out too much. It should remain tender.



    Do not overcook the searing; the chicken risks becoming dry.
  1. Combine chicken and mushrooms

    Add the mushrooms with all their cooking liquid. Add salt. Cover with the lid and cook over low heat for about 10 minutes.

    Chop the fresh parsley and add it to the pan. Stir and continue cooking for another 5 minutes.
